I'd use VMware Fusion or Parallels Desktop. With that she could use their 'virtual disk' capability and avoid having to create a separate partition for Windows. However, every time she ran Windows Time Machine would want to back up that 'virtual disk', which would be quite large.
Here's how I'd work around that problem, assuming that she only used Windows for Quickbooks: (1) I'd keep the Quickbooks data file(s) in the Mac environment, using the 'shared disk' capability of Fusion or Parallels Desktop's corresponding feature. That way the Quickbooks data would be backed up by Time Machine. (2) I'd exclude the Windows 'virtual disk' from Time Machine. (3) I'd make a manual backup of the Windows 'virtual disk' every so often (not with Time Machine) just to make it easier to recover if something went wrong with the Windows environment.
